Celebrate the start of Cheese Lovers NZmonth of cheese (October) with this gorgeous tomato, gruyere & mustard tart - it has a knock out flavour and is perfect for a weekend lunch!
Tomato, gruyere & tart
I first tried this tart whilst having a picnic in a park in the middle of the French town of Dijon. Whether it was the intense flavour of the locally made mustard, the nuttiness of gruyere or the kissing couples all around us I’ll never be sure, but I fell in love with this tart immediately. Don’t be afraid of the amount of mustard!
Serves 2-4
1 sheet short savoury pastry, rolled a bit thinner than they are sold
¼ cup Dijon mustard, wholegrain
1 clove garlic, minced
2-3 large ripe tomatoes, sliced ½ -1cm thick
1 cup grated Gruyere
2 tablespoons fresh thyme leaves
2 tablespoons extra virgin olive oil
½ tablespoon salt
Preheat the oven to 180°C. Line a 10cm x 20cm (approx.) tart tin, or oven tray with pastry. If using an oven tray, build the edges up slightly, by folding the pastry in, to form a rim.
Mix together the mustard and minced garlic and spread over the bottom of the pastry. Sprinkle the cheese over it and arrange the tomato slices over the cheese, overlapping them slightly. Sprinkle with the thyme, drizzle of olive oil and sea salt.
Bake in the middle of the oven until the pastry is golden brown and the tomatoes are very soft and deep red in colour. This will take about 30-40 minutes. Keep an eye on it after about 25 minutes to ensure that the edges of the pastry don’t burn - cover them roughly with tin foil if they look too brown.
Eat warm or cold, on its own or with salad.

October is NZ Cheese Month and I'm really thrilled about this because I love cheese! I find it exciting to see the wonderful range and quality of cheese being produced up and down our glorious land and we, as consumers, now appreciate a wider variety of cheese than ever before. We are just so lucky and to celebrate our good fortune, a whole month has been set aside to honour local cheeses and their producers. So for starters, I'm sharing my favourite cheesy pie recipe. It's a winner, just like the NZ cheeses it's made with. Enjoy NZ Cheese Lovers! #NZcheesemonth Cheese Lovers NZ

Serves 6
2 cloves garlic, finely chopped
120g super kale (small kale leaves)
1/2 cup fresh whole-wheat breadcrumbs
250g NZ ricotta or cottage cheese
200g NZ feta cheese crumbled
100g NZ aged gouda, grated
1 tbsp thyme leaves, chopped
3 large eggs, lightly beaten
Salt and freshly ground black pepper
150g (8 sheets) filo pastry
1 Preheat the oven to 190°C. Grease an ovenproof pie dish with butter or oil.
2 Coarsely chop kale and place in a bowl with garlic, breadcrumbs, three cheeses, thyme and eggs. Season with salt and pepper and mix well.
3 Spoon mixture into prepared dish and press with the back of a spoon to smooth the surface.
4 Cut the roll of filo pastry sheets into 2cm thick sections. Toss the sliced filo on a board to separate into ribbons. Completely cover the cheese mixture with the pile of filo ribbons and spray lightly all over with olive oil.
5 Bake for 30–35 minutes or until the filling mixture is set and the filo pastry is golden brown. Serve hot or warm
